Market Greens with Herb Dressing
This is a blueprint more than a fixed formula. Begin with the best crisp greens you can find, add something peppery, and use the herb dressing with an open hand.

Ingredients
Herb dressing
- 1 packed cup basil and parsley leaves
- 1 small shallot, roughly chopped
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 1/3 cup extra-virgin olive oil
- Kosher salt and black pepper
Salad
- 6 cups mixed tender lettuces
- 1 cup arugula
- 4 radishes, thinly sliced
- 1 small cucumber, thinly sliced
- 1/3 cup toasted pumpkin seeds
Method
- Blend the herbs, shallot, vinegar, mustard, and 1/2 teaspoon salt until finely chopped. With the blender running, stream in the olive oil. Season with black pepper.
- Place the lettuces, arugula, radishes, and cucumber in a wide bowl. Add enough dressing to lightly coat the leaves and toss gently.
- Scatter the pumpkin seeds over the salad and serve immediately with extra dressing alongside.
