Market Greens with Herb Dressing

Ingredients

Herb dressing

  • 1 packed cup basil and parsley leaves
  • 1 small shallot, roughly chopped
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/3 cup extra-virgin olive oil
  • Kosher salt and black pepper

Salad

  • 6 cups mixed tender lettuces
  • 1 cup arugula
  • 4 radishes, thinly sliced
  • 1 small cucumber, thinly sliced
  • 1/3 cup toasted pumpkin seeds

Method

  1. Blend the herbs, shallot, vinegar, mustard, and 1/2 teaspoon salt until finely chopped. With the blender running, stream in the olive oil. Season with black pepper.
  2. Place the lettuces, arugula, radishes, and cucumber in a wide bowl. Add enough dressing to lightly coat the leaves and toss gently.
  3. Scatter the pumpkin seeds over the salad and serve immediately with extra dressing alongside.
